Brown Butter Lobster Buns
Yield:4 buns
Ingredients
16 oz chopped lobster sensation, thawed |
1 stick of unsalted butter |
2 T dry milk powder |
Sea salt to taste |
2 T fresh lemon juice |
3 T fresh chopped chives |
4 lotus leaf buns |
Directions
- In a heavy bottom 2 qt pan, melt the stick of butter over medium heat. Add the dry milk powder and salt. Whisk often until the solids begin to brown, about 6 minutes, and then remove from heat.
- In a medium bowl combine the lobster sensation with sea salt to taste, half of the chives and fresh lemon juice.
- Add the seasoned lobster to the brown butter pan and stir to combine and heat over medium heat.
- Warm the buns either in a steamer for about 2-3 minutes or the microwave for one minute.
- Fill each warm bun with the warmed lobster filling and garnish with remaining chopped fresh chive.
