Summer Time Greek Salad
Yield:
Ingredients
1-pint cherry tomatoes, halved |
1 cucumber, sliced ¼ inch thick |
½ red onion, half-rounds |
½ cup feta cheese, cut in cubes |
¼ cup Kalamata olives, pitted |
6 tbsp Corto TRULY 100% extra virgin olive oil |
2 tbsp fresh lemon juice |
½ tbsp garlic, chopped |
1 tsp red wine vinegar |
½ tsp dried oregano |
Directions
- Whisk together the Corto olive oil, lemon juice, garlic, red wine vinegar, and oregano. Set aside.
- Combine the tomatoes, cucumber, and onion into a large bowl
- Pour the vinaigrette over the salad, then gently mix in the feta and olives
- Set aside for 20 minutes to let the flavors develop, then serve.
