Summer Time Greek Salad

Ingredients
| 1-pint cherry tomatoes, halved |
| 1 cucumber, sliced ¼ inch thick |
| ½ red onion, half-rounds |
| ½ cup feta cheese, cut in cubes |
| ¼ cup Kalamata olives, pitted |
| 6 tbsp Corto TRULY 100% extra virgin olive oil |
| 2 tbsp fresh lemon juice |
| ½ tbsp garlic, chopped |
| 1 tsp red wine vinegar |
| ½ tsp dried oregano |
Directions
- Whisk together the Corto olive oil, lemon juice, garlic, red wine vinegar, and oregano. Set aside.
- Combine the tomatoes, cucumber, and onion into a large bowl
- Pour the vinaigrette over the salad, then gently mix in the feta and olives
- Set aside for 20 minutes to let the flavors develop, then serve.
