Chorizo & Egg Breakfast Burritos

Hot, hearty and filling Chorizo & Egg Breakfast Burritos are a great way to start the day. Fluffy scrambled eggs, zesty Supremo® Brand Pork Chorizo and melted Chihuahua® Brand Quesadilla cheese make these burritos a popular choice for the whole family.

Ingredients

4 large eggs
¼ cup diced tomato
1/2 cup diced white onion
1/8 tsp. Kosher salt
1/8 tsp. ground black pepper
1 link from (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®
1 cup canned black beans, drained, rinsed
2 (12-inch) flour tortillas
2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

Directions

  1. In a medium bowl; whisk eggs with tomato, ¼ cup onion, salt and pepper.
  2. Preheat a medium pan for 1 minute over medium-high heat. Add Supremo® Brand Pork Chorizo and cook for 4 minutes, breaking chorizo into crumbles while cooking. Add remaining ¼ cup onion, and cook for 1 minute. Mix in beans and continue cooking for 3 minutes more. Remove chorizo from the pan. Divide mixture into 2 portions and set aside.
  3. Using the same pan, pour egg mixture and cook for 1 to 2 minutes, folding while cooking, or until eggs are set. Divide egg mixture into 2 portions and reserve until needed.
  4. Place the tortillas on a clean surface. For each tortilla; add ½ cup Chihuahua® Quesadilla Cheese across a tortilla, just off-center closest to you. Top with 1 portion of egg mixture, 1 portion of chorizo mixture, and an additional ½ cup of Chihuahua® Quesadilla Cheese. Fold the tortilla bottom over the filling, pull the filling in tightly, fold sides over, and roll from the bottom up tucking in the sides as you go.
  5. Heat a cast-iron grill pan over medium-high heat for 1 minute; toast burritos for 1 minute per side, or until burritos are golden and lightly toasted. Serve and enjoy!
